  • 1.5 lbs boneless, skinless chicken breasts
  • 1 medium yellow onion finely diced
  • 3-4 cloves garlic minced
  • 2 (15-oz) cans great northern beans rinsed and drained
  • 2 (4-oz) cans diced green chiles undrained
  • 1 cup frozen corn
  • 4 cups low-sodium chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 oz light or Neufchâtel cream cheese cut into cubes
  • 2 tbsp fresh lime juice

Cooking Instructions

  • Place chicken breasts in the slow cooker.
  • Add onion, garlic, beans, green chiles, and corn over the chicken.
  • Pour in chicken broth and sprinkle with chili powder, cumin, oregano, salt, and pepper.
  • Cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is easily shredded.
  • Remove and shred chicken, then return it to the pot.
  • Stir in cubed cream cheese until melted and fully incorporated.
  • Add lime juice, taste, and adjust seasonings as needed.
  • Serve in bowls and garnish with desired toppings.

Notes

For best flavor, let the chili simmer on LOW for the full 8 hours. Adjust the spice level by adding more or less chili powder/cumin. This chili freezes well for future meals.
