  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup sun-dried tomatoes chopped
  • 0.5 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 2 cups spinach
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried oregano

  • Fresh basil chopped

Cooking Instructions

  • Season chicken breasts with salt, pepper, and oregano.
  • Heat olive oil in a large skillet over medium-high heat, then cook chicken for 6-8 minutes per side until golden and cooked through.
  • Remove chicken, let it rest, then slice or shred it.
  • In the same skillet, sauté minced garlic for 1 minute.
  • Stir in sun-dried tomatoes, heavy cream, and chicken broth; bring to a simmer.
  • Add cooked pasta, Parmesan cheese, and spinach, tossing until spinach wilts.
  • Return chicken to skillet, mix well, and serve hot.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the sauce. This dish is best served immediately, but leftovers can be stored in the refrigerator for up to 3 days.
