  • 1.5 lbs Salmon Fillets skin off, cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 0.5 tsp Garlic Powder
  • 0.25 tsp Onion Powder
  • 0.25 tsp Salt
  • 0.125 tsp Black Pepper
  • 0.25 cup Kalamata Olives pitted and roughly chopped
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Fresh Parsley chopped (for garnish)

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • In a medium bowl, combine the salmon cubes, olive oil, dried oregano, garlic powder, onion powder, salt, and black pepper, tossing gently to coat evenly.
  • Stir the chopped Kalamata olives into the seasoned salmon mixture.
  • Spread the salmon and olive mixture in a single layer on the prepared baking sheet, ensuring some space between each piece.
  • Bake for 10-14 minutes, or until the salmon is opaque throughout and flakes easily (internal temperature 145°F/63°C).
  • Remove from the oven, drizzle with fresh lemon juice, and garnish with chopped fresh parsley before serving.

Notes

For extra flavor, you can marinate the salmon for 15-20 minutes before baking. Be careful not to overcook the salmon to keep it moist and tender.
