Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breast or thighs cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 lemon juiced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Base

  • 1 cup cooked quinoa

For the Veggies & Fixings

  • 1 large cucumber diced
  • 1 pint cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup crumbled feta cheese

For the Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 lemon juiced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

Marinate and Cook Chicken

  • Whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper to create the marinade.
  • Add chicken pieces, toss to coat, then cover and refrigerate for 30 minutes to 4 hours.
  • Heat a skillet with olive oil, then cook the marinated chicken for 5-7 minutes until cooked through and lightly browned.

Prepare the Base and Veggies

  • Cook quinoa according to package directions.
  • Dice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and halve the olives.

Assemble and Serve

  • Divide cooked quinoa, cooked chicken, prepped vegetables, and feta cheese among serving bowls.
  • Drizzle generously with the lemon-herb vinaigrette and serve immediately.

Notes

For an extra burst of freshness, garnish with fresh mint or parsley. This dish is also great for meal prepping; simply store components separately and combine just before serving.
