For the Salad

  • 3 cups cooked chicken, shredded or diced
  • 1 cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted and halved
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh parsley, chopped

For the Lemon-Herb Dressing

  • 0.33 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried dill
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

Prepare the Salad

  • In a large bowl, combine the shredded chicken, diced cucumber, halved cherry tomatoes, thinly sliced red onion, Kalamata olives, crumbled feta cheese, and fresh parsley.

Make the Dressing

  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, dried dill, minced garlic, salt, and black pepper until well combined.

Combine and Serve

  • Pour the dressing over the chicken and vegetable mixture. Toss gently to ensure all ingredients are evenly coated. Serve immediately or chill for later.

Notes
