  • 1 lb chicken sausage such as sun-dried tomato or plain
  • 1 red bell pepper
  • 1 zucchini
  • 1 pint cherry tomatoes
  • ½ red onion
  • ½ cup Kalamata olives
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • ¼ cup crumbled feta cheese for serving
  • Fresh parsley chopped, for garnish
  • Lemon wedges for serving

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a spacious bowl, combine sliced chicken sausage, red bell pepper, zucchini, halved cherry tomatoes, red onion, and Kalamata olives.
  • Drizzle the mixture with olive oil, then season with dried oregano, garlic powder, salt, and black pepper, tossing until everything is well coated.
  • Spread the seasoned ingredients evenly in a single layer on the prepared baking sheet; use a second sheet if needed to avoid overcrowding.
  • Roast for 25-30 minutes, stirring halfway, until vegetables are tender-crisp and caramelized, and the sausage is cooked through and lightly browned.
  • Remove the pan from the oven, then garnish with crumbled feta cheese and fresh parsley, serving immediately with lemon wedges.

Notes

For extra flavor, lightly toast the dried oregano in a dry pan for a minute before adding it to the vegetables. You can also add other vegetables like broccoli or asparagus to the sheet pan. Adjust spice levels to your preference. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
