  • 1 store-bought pizza dough

  • 2 tablespoons olive oil for base
  • 1 teaspoon minced garlic
  • 0.5 teaspoon dried oregano
  • 0.5 cup Kalamata olives sliced
  • 0.5 cup artichoke hearts quartered or chopped
  • 0.25 cup sun-dried tomatoes oil-packed, drained, sliced
  • 0.25 red onion thinly sliced
  • 0.5 cup crumbled feta cheese
  • 0.25 cup shredded mozzarella cheese

Garnish

  • 2 tablespoons fresh parsley chopped
  • 1 lemon wedge

Preparation

  • Preheat your oven to 450°F (232°C); if using a pizza stone, preheat it for at least 30 minutes.
  • Roll out the pizza dough on a floured surface or parchment paper to your desired thickness and shape.

Assemble

  • Combine olive oil, minced garlic, and dried oregano in a small bowl, then spread this mixture evenly over the pizza dough, leaving a small border.
  • Evenly distribute the sliced Kalamata olives, artichoke hearts, sun-dried tomatoes, and thinly sliced red onion over the garlic-oil base.
  • Sprinkle both the crumbled feta cheese and shredded mozzarella cheese over the vegetables.
  • Carefully transfer the pizza to the hot oven, either onto the preheated pizza stone or a baking sheet.

Bake and Serve

  • Bake the pizza for 10-15 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.
  • Remove the pizza from the oven, then sprinkle with fresh chopped parsley and squeeze a lemon wedge over the top before slicing and serving.

Notes

For an extra crispy crust, preheating your pizza stone is a great step. You can also experiment with other Mediterranean vegetables like bell peppers or spinach. Adjust the amount of garlic to your preference. Serve immediately for best taste.
