  • 1 tablespoon olive oil
  • 1/4 cup chopped cherry tomatoes
  • 1 cup fresh spinach
  • 2 tablespoons crumbled feta cheese
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon dried oregano
  • Pinch red pepper flakes optional
  • Salt and black pepper to taste
  • 1 slice crusty bread, toasted for serving

Cooking Steps

  • Heat olive oil in a non-stick pan over medium heat.
  • Add minced garlic and chopped cherry tomatoes to the pan and sauté for 2-3 minutes until the tomatoes soften.
  • Stir in the fresh spinach and oregano, cooking for 1-2 minutes until the spinach wilts.
  • Whisk the eggs in a separate bowl with a pinch of salt, black pepper, and optional red pepper flakes.
  • Pour the whisked eggs into the pan with the sautéed vegetables.
  • As the eggs begin to set, gently scramble them to your preferred consistency.
  • Just before the eggs are fully cooked, crumble feta cheese into the pan and fold it in; cook for another 30 seconds until warm and slightly melted.
  • Serve immediately with a slice of toasted crusty bread.

Notes

For extra flavor, add a squeeze of lemon juice at the end. Enjoy your scramble with a side of fresh fruit for a complete meal.
