  • 1 tbsp olive oil
  • 1 lb lean ground turkey 93% or higher
  • small onion finely chopped
  • 2 garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1/4 cup low-sodium chicken broth
  • 1/2 cup canned diced tomatoes drained
  • 1/2 cup cooked quinoa
  • 1 cup fresh spinach
  • 1/4 cup crumbled feta cheese optional
  • 2 tablespoons fresh parsley chopped (for garnish)
  • 1 lemon wedge for serving

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it apart, and cook until no longer pink, then drain excess fat.
  • Sauté chopped onion in the skillet for 3-4 minutes until softened. Stir in minced garlic, oregano, cumin, and black pepper, cooking for one minute until fragrant.
  • Pour in chicken broth and diced tomatoes, bring to a gentle simmer, then reduce heat and cook for 5 minutes to meld flavors.
  • Stir in cooked quinoa and fresh spinach. Cook for 2-3 minutes until spinach is wilted and the dish is heated through.
  • Taste the mixture and adjust seasoning as needed.
  • Divide into bowls and, if desired, top with feta cheese and parsley. Serve with a lemon wedge.

Notes

For a spicier kick, add a pinch of red pepper flakes with the other spices.
