  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 bell pepper any color, diced
  • 1 can diced tomatoes undrained
  • 1/2 cup chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and black pepper to taste

For Serving & Garnish

  • 1 cup cooked quinoa or brown rice for serving
  • 1/4 cup crumbled feta cheese optional, for topping
  • 2 tbsp fresh parsley chopped, for topping

Cooking Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, then drain any excess fat.
  • Add chopped onion, garlic, and bell pepper to the skillet with the turkey. Sauté for 5-7 minutes until the vegetables have softened.
  • Stir in the undrained diced tomatoes, chicken broth, oregano, and basil. Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes to allow the flavors to meld.
  • Season the mixture with salt and pepper to taste.
  • Serve the Mediterranean-inspired turkey mixture over cooked quinoa or brown rice, and garnish with crumbled feta cheese and fresh parsley if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes with the dried herbs. This recipe is also great for meal prepping; simply portion into containers for quick and healthy lunches or dinners throughout the week.
