Main Ingredients

  • 2.5 pounds boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried marjoram
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper optional, for a slight kick
  • Salt and freshly ground black pepper to taste
  • 1/2 lemon, thinly sliced optional, for extra flavor

Instructions
 

Preparation

  • Lightly grease your slow cooker or use a slow cooker liner.
  • Place the chicken breasts in a single layer at the bottom of the slow cooker.

Seasoning & Cooking

  • In a small bowl, whisk together olive oil, minced garlic, oregano, marjoram, thyme, cayenne pepper (if using), salt, and black pepper.
  • Pour the seasoning mixture evenly over the chicken breasts.
  • Pour chicken broth around the chicken, and arrange lemon slices on top if desired.
  • Cover and cook on LOW for 7-8 hours or on HIGH for 3.5-4 hours, until the chicken is easily shredded.

Shredding & Serving

  • Remove the cooked chicken from the slow cooker and place it on a cutting board or in a large bowl.
  • Using two forks, shred the chicken to your desired consistency.
  • Return the shredded chicken to the cooking liquid, stir, and let it sit for a few minutes to absorb the juices before serving.

Notes

This versatile shredded chicken is excellent in wraps, salads, or as a protein source for various Mediterranean-inspired dishes. Adjust spice levels to your preference. Adding fresh herbs like parsley or cilantro at the end can brighten the flavors even further.
