  • 200 g Spaghetti
  • 4 Garlic cloves, thinly sliced
  • 0.5 tsp Chili flakes
  • 200 g Cherry tomatoes halved
  • 4 tbsp Olive oil
  • 0.25 cup Parsley fresh, chopped
  • 0.25 cup Parmesan cheese grated
  • Salt to taste
  • Black pepper to taste

Cooking Instructions

  • Cook spaghetti according to package directions in salted water.
  • While pasta cooks, heat olive oil in a pan over medium heat, then add sliced garlic and chili flakes, cooking until fragrant (about 1 minute).
  • Add halved cherry tomatoes to the pan and cook for 5-7 minutes, until they soften and burst.
  • Drain the spaghetti, reserving 1/2 cup of pasta water, and add the spaghetti to the pan with the sauce.
  • Toss everything together, adding a splash of reserved pasta water to create a silky sauce, and stir in fresh parsley and grated Parmesan.
  • Season with salt and black pepper to taste and serve immediately.

Notes

For an extra kick, add a pinch more chili flakes. You can also add some cooked shrimp or chicken for a more substantial meal.
