Ingredients
  

Crust

  • 12-14 Gingerbread Cookies
  • 4 tablespoons Unsalted Butter, melted

Cheesecake Filling

  • 8 ounces Cream Cheese, softened
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Cloves
  • 1/4 cup Molasses
  • 1 teaspoon Vanilla Extract
  • 1 cup Heavy Cream

Optional Garnish

  • Whipped cream, extra gingerbread crumbs, or small gingerbread cookies

Instructions
 

Crust Preparation

  • Finely crush the gingerbread cookies into crumbs using a food processor or by hand in a Ziploc bag with a rolling pin.

Crust Assembly

  • Combine the cookie crumbs with melted butter in a bowl and mix until evenly coated.
  • Press the crumb mixture firmly into the bottom of 6-8 dessert cups, then chill them in the refrigerator.

Cheesecake Filling

  • Beat softened cream cheese until smooth and creamy for 1-2 minutes.
  • Add sugar, spices, molasses, and vanilla extract, then beat on medium speed until smooth and fully combined.
  • In a separate bowl, whip heavy cream on high speed until stiff peaks form, being careful not to overmix.
  • Gently fold the whipped cream into the cream cheese mixture in two additions until light, airy, and just combined.

Assembly and Chilling

  • Spoon or pipe the cheesecake filling evenly over the chilled gingerbread crusts.
  • Cover the cups and refrigerate for at least 4 hours, or preferably overnight, to allow them to set completely.

Garnish and Serve

  • Before serving, garnish with whipped cream, extra gingerbread crumbs, or miniature gingerbread cookies, if desired.

Notes
