Ingredients
  

For the Meatloaf:

  • 1 ½ pounds ground beef (80/20 lean works great for flavor and moisture)
  • 1 cup breadcrumbs (plain or panko)
  • ½ cup milk (any kind, whole milk adds a bit more richness)
  • 1 large egg lightly beaten
  • ¼ cup finely chopped onion (or 1 tbsp onion powder for even less fuss)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce for an extra umami kick

For the Glaze:

  • ½ cup ketchup
  • 2 tablespoons brown sugar (light or dark)
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • ½ teaspoon mustard (Dijon or yellow, your preference)

Instructions
 

Part 1

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or foil.
  • In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic powder, salt, and pepper. Add Worcestershire sauce if desired, mixing until just combined to avoid overmixing.

Part 2

  • Form the meat mixture into an oblong loaf on the baking sheet and bake for 45 minutes.
  • While the meatloaf bakes, whisk together ketchup, brown sugar, apple cider vinegar, and mustard for the glaze. After 45 minutes, spread the glaze over the meatloaf.
  • Return the meatloaf to the oven for another 15-20 minutes, or until its internal temperature reaches 160°F (71°C).

Notes

To avoid a tough meatloaf, be careful not to overmix the ingredients. For best results, use a meat thermometer to ensure the meatloaf is cooked to the correct internal temperature.
