  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 teaspoon paprika smoked paprika recommended
  • 1/2 teaspoon dried thyme
  • 4 medium russet potatoes peeled and diced into 1/2-inch cubes
  • 1/2 cup beef broth or water
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)

  • Heat olive oil in a large skillet over medium-high heat, then add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  • Push the beef to one side and add diced onion to the empty side, cooking until softened (5-7 minutes). Stir in minced garlic, paprika, and thyme, cooking for one more minute until fragrant.
  • Stir together the beef, onions, and spices, then add diced potatoes to the skillet and combine with the beef mixture while pouring in beef broth.
  • Reduce heat to medium-low, cover, and simmer for 15-20 minutes until potatoes are tender, stirring occasionally.
  • Uncover and increase heat to medium-high; cook for 10-15 minutes, stirring occasionally, until hash is crispy and caramelized.
  • Season with salt and pepper to taste, then garnish with fresh chopped parsley before serving.

Notes

For extra flavor, consider using grass-fed beef. You can also add a pinch of cayenne pepper for a little kick. This hash is fantastic served with a fried egg on top!
