  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 4 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 12 oz fettuccine broken in half
  • 1 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup fresh parsley chopped for garnish

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper.
  • Cook chicken for 5-7 minutes until browned and cooked through. Remove chicken from skillet and set aside.
  • Add minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in chicken broth and heavy cream, bringing the mixture to a simmer.
  • Add the broken fettuccine to the skillet, ensuring it is mostly submerged in the liquid. Cook for 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid has been absorbed.
  • Return cooked chicken to the skillet. Stir in grated Parmesan cheese until melted and a creamy sauce forms.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. Ensure pasta is stirred frequently to prevent sticking to the bottom of the pan and to ensure even cooking.
