  • 6-8 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh chopped rosemary or thyme (or 1 teaspoon dried)
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • ½ lemon cut into wedges (optional, for serving or roasting)

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  • Pat chicken thighs dry with paper towels and place them in a large bowl.
  • In a small bowl, whisk together minced garlic, olive oil, herbs, paprika, onion powder, salt, and pepper.
  • Pour the mixture over the chicken thighs and coat them thoroughly.
  • Arrange seasoned chicken thighs in a single layer on the baking sheet, adding lemon wedges if desired.
  • Bake for 30-40 minutes until chicken is cooked through (165°F / 74°C) and skin is golden and crispy.
  • Remove from oven and let rest for 5-10 minutes before serving for tender and moist chicken.

Notes

Serve hot with your favorite side dishes like roasted vegetables, rice, or mashed potatoes. For extra crispiness, you can broil the chicken for the last few minutes, watching carefully to prevent burning.
