  • 12 ounces linguine, spaghetti, or your favorite long pasta
  • 4 cups chicken or vegetable broth low sodium
  • 1 diced tomatoes undrained
  • 4-5 garlic minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream (or half-and-half for a lighter option)
  • 3-4 cups fresh spinach packed (optional)
  • 1/2 cup grated Parmesan cheese plus more for serving
  • 1/2 teaspoon red pepper flakes (or more, to taste)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

  • Heat olive oil in a large pot or deep skillet over medium heat, then add minced garlic and red pepper flakes and cook for about 1 minute until fragrant.
  • Pour in broth and diced tomatoes, stir in oregano, salt, and pepper, then bring the mixture to a boil.
  • Add dry pasta, ensuring it is submerged, reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally.
  • After 8-10 minutes, uncover, add shrimp and spinach, and simmer for another 3-5 minutes until shrimp are pink and pasta is cooked.
  • Remove from heat, stir in heavy cream and Parmesan cheese until smooth and creamy, then adjust seasoning as needed.
  • Ladle into bowls, garnish with parsley and extra Parmesan cheese, and serve immediately.

Notes

For a richer flavor, consider using seafood broth instead of chicken or vegetable broth. If you don't have fresh spinach, frozen spinach can be used; just make sure to thaw and squeeze out excess water before adding. Remember to taste and adjust seasonings at the end, as salt content can vary with broths and diced tomatoes.
