  • Heat olive oil or butter in a non-stick skillet over medium heat.
  • Whisk eggs with a pinch of salt and pepper until just combined.
  • Sauté chopped spinach in the skillet for 1-2 minutes until wilted.
  • Pour whisked eggs over spinach and gently push toward the center as they set.
  • Stir in crumbled feta when eggs are mostly cooked but still slightly wet.
  • Cook for another 30-60 seconds until feta is warm and eggs reach desired consistency; avoid overcooking.
  • Serve immediately.

Notes

Adjust salt and pepper to your preference. For a creamier scramble, you can add a tablespoon of milk or cream to the eggs before whisking.
