Pastry

  • 1 sheet frozen puff pastry thawed

Filling

  • 1 large apple (like Fuji or Honeycrisp), peeled, cored, and finely diced
  • 2 tablespoons granulated sugar (plus more for sprinkling)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Topping

  • 1 tablespoon unsalted butter melted (for brushing) OR 1 egg, whisked with 1 tbsp water (for egg wash)
  • Powdered sugar for dusting (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the finely diced apple, 2 tablespoons granulated sugar, cinnamon, and lemon juice; then mix thoroughly.

Assembly

  • Unroll the thawed puff pastry onto a lightly floured surface or parchment paper, then cut it into four equal squares.
  • Spoon 1-2 tablespoons of the apple filling onto one half of each pastry square, ensuring to leave a small border.
  • Fold the other half of the pastry over to form a triangle and gently press the edges to seal, optionally crimping with a fork.
  • Transfer the turnovers to the prepared baking sheet, then brush their tops with melted butter or egg wash and optionally sprinkle with granulated sugar.
  • Make 2-3 small slits on top of each turnover with a sharp knife to allow steam to escape during baking.

Baking and Serving

  • Bake for 15-20 minutes, until the pastry is puffed, golden brown, and cooked through.
  • Allow the turnovers to cool slightly on a wire rack before serving, and dust with powdered sugar if desired.

Notes

For extra flavor, you can add a pinch of nutmeg to the apple filling. Ensure your puff pastry is very cold for the best results, as this helps it puff up nicely. If you don't have a rolling pin, you can gently stretch the puff pastry with your hands.
