  • 1 lb ground beef
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 15 oz, undrained
  • 1 can kidney beans 15 oz, rinsed
  • 1 can tomato sauce 8 oz
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups dry elbow macaroni
  • 1 cup shredded cheddar cheese

  • Brown the ground beef with the chopped onion and minced garlic in a large skillet, then drain any excess fat.
  • Stir in the diced tomatoes (undrained), rinsed kidney beans, tomato sauce, beef broth, chili powder, and cumin.
  • Add the dry elbow macaroni, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, stirring occasionally, until the pasta is tender and most liquid is absorbed.
  • Stir in the shredded cheddar cheese until melted and serve hot.

Notes

For extra heat, add a pinch of red pepper flakes with the chili powder and cumin. This recipe is a great one-pot meal that minimizes cleanup.
