Ingredients
  

Main Ingredients

  • 1 lb lean ground turkey
  • 2 tbsp low sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch (or arrowroot powder)
  • 1 tbsp olive oil or other cooking oil
  • 4 cups mixed stir-fry vegetables (broccoli florets, sliced carrots, bell peppers, snap peas, sliced mushrooms, chopped bok choy)

  • sesame seeds
  • chopped green onions
  • sriracha

Instructions
 

Preparation

  • In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, grated ginger, minced garlic, and cornstarch until smooth, then set aside.

Cooking

  • Heat olive oil in a large skillet or wok over medium-high heat, then add and brown the ground turkey for 5-7 minutes, breaking it up and draining any excess fat.
  • Push the turkey to one side, add mixed stir-fry vegetables to the other, and stir-fry for 3-5 minutes until crisp-tender.
  • Combine turkey and vegetables, whisk the sauce again, and pour over; cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats everything.

Serving

  • Remove from heat and serve hot, garnishing with sesame seeds, green onions, or sriracha if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes with the sauce. You can also use other vegetables you have on hand, such as kale or bell peppers. Serve over rice or noodles for a complete meal.
