  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup broccoli florets
  • 1 cup fresh spinach
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • 1/2 lemon lemon juice
  • 2 tbsp fresh parsley chopped (for garnish, optional)

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken pieces and cook until lightly browned and mostly cooked through (5-7 minutes).
  • Stir in chopped onion, minced garlic, and bell pepper, then sauté for 3-5 minutes until softened.
  • Add broccoli, oregano, garlic powder, salt, and pepper; cook for 3-4 minutes until broccoli is tender-crisp.
  • Add fresh spinach and cook until wilted (1-2 minutes).
  • Remove from heat and squeeze fresh lemon juice over the chicken and vegetables.
  • Taste and adjust seasoning as needed, then garnish with parsley if desired and serve immediately.

Notes

For extra flavor, consider marinating the chicken for 15-30 minutes before cooking. Adjust the amount of lemon juice to your preference.
