Preparation

  • Cook quinoa according to package directions if not already prepared.

Assembly

  • In a medium bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, and cucumber.
  • Pour the vinaigrette over the mixture and gently toss to coat all ingredients.
  • Taste and adjust seasonings as needed, then sprinkle with feta cheese and fresh parsley if desired.
