Quick & Simple Meatloaf Recipe

Ingredients
  

Meatloaf

  • 1 ½ lbs Ground Beef 80/20 lean preferred
  • ½ cup Breadcrumbs plain or panko
  • ½ cup Milk
  • 1 large Egg
  • ½ medium Onion finely diced
  • 2 cloves Garlic minced
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Italian Seasoning
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Glaze

  • ½ cup Ketchup
  • 2 tbsp Brown Sugar
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Dijon Mustard

Other

  • 1 tsp Olive Oil for sautéing aromatics

Instructions
 

Preparation

  • Heat olive oil in a skillet, sauté diced onion for 5-7 minutes until softened, then add minced garlic and cook for another minute until fragrant.
  • Remove from heat and let cool.
  • In a large bowl, whisk milk and egg, then add breadcrumbs, Worcestershire sauce, Italian seasoning, salt, and pepper; mix well and let sit for 5 minutes.
  • Add the cooled onion and garlic mixture along with the ground beef to the breadcrumb mixture and gently mix until just combined.
  • Lightly grease a baking sheet or line with parchment paper, then shape the meat mixture into a 9x5 inch rectangular loaf.

Cooking

  • In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth.
  • Spread two-thirds of the glaze over the meatloaf.
  • Preheat oven to 375°F (190°C).
  • Bake for 45 minutes, then remove, spread remaining glaze, and bake for another 15-20 minutes until the internal temperature reaches 160°F (71°C).

Resting

  • Remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing.

For best results, do not overmix the meatloaf mixture, as it can lead to a dense texture. Ensure the internal temperature reaches 160°F (71°C) for food safety. Resting the meatloaf allows the juices to redistribute, resulting in a more tender and flavorful finished dish.
