  • 1 tbsp olive oil
  • 1 lb large shrimp peeled and deveined
  • 1/2 tsp smoked paprika
  • 1/4 tsp dried oregano
  • salt Pinch of
  • black pepper Pinch of
  • 1 bell pepper large (yellow or orange), cored and thinly sliced
  • 1/2 red onion thinly sliced
  • 2 garlic cloves, minced
  • 1/2 tsp smoked paprika remaining
  • 1/4 tsp dried oregano remaining
  • cayenne pepper Pinch of (optional)
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup cherry tomatoes halved

For Garnish

  • Fresh parsley chopped
  • Lemon wedges for serving

Instructions
 

Preparation

  • Pat the peeled and deveined shrimp dry with paper towels.
  • Toss the shrimp with 1/2 teaspoon smoked paprika, 1/4 teaspoon oregano, salt, and pepper; set aside.

Cooking

  • Heat olive oil in a large skillet over medium-high heat, then sauté sliced bell pepper and red onion for 3-5 minutes until softened.
  • Stir in minced garlic, the remaining 1/2 teaspoon smoked paprika, and 1/4 teaspoon oregano (and cayenne, if using) for 30 seconds.
  • Add shrimp to the skillet in a single layer and cook for 1-2 minutes per side until pink and opaque.
  • Pour in broth, stirring to deglaze the pan, then add halved cherry tomatoes and cook for 1-2 minutes until the sauce reduces and tomatoes soften.
  • Remove from heat, adjust seasoning as needed, and garnish with fresh parsley and lemon wedges.

Notes

For an extra kick, add a pinch of red pepper flakes with the cayenne. Serve with quinoa or rice for a complete meal.
