  • 4 ounces dark chocolate
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon red gel food coloring optional, for vibrant color

Preparation

  • Preheat your oven to 400°F (200°C). Generously butter four 6-ounce ramekins, dust with cocoa powder, and place them on a baking sheet.
  • Melt the chopped dark chocolate and 1/2 cup butter in a microwave or over a double boiler until smooth, then set aside to cool slightly.

Mixing

  • In a large bowl, whisk together the whole eggs, egg yolks, and granulated sugar until light in color and slightly thickened.
  • Stir the cooled melted chocolate mixture into the egg mixture, then add vanilla extract, salt, and red food coloring (if desired), mixing until evenly combined.
  • Sift the flour and cocoa powder into the chocolate mixture and gently fold until just combined, being careful not to overmix.

Baking & Serving

  • Divide the batter evenly among the prepared ramekins and bake for 12-14 minutes, or until the edges are set and the center slightly jiggles.
  • Carefully remove from the oven, cool for 1-2 minutes, then invert onto dessert plates. Dust with powdered sugar and garnish with fresh berries before serving immediately.

For best results, do not overmix the batter to ensure a tender crumb. The key to a perfect lava cake is the slightly jiggling center when removed from the oven, indicating a molten interior. Serve immediately for an optimal experience.
