  • 1 cup shredded cheddar cheese
  • 2 cans refrigerated crescent rolls

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray.
  • In a large skillet, cook the breakfast sausage over medium heat, breaking it apart with a spoon until fully browned.
  • Drain any excess grease and set the cooked sausage aside in a medium bowl.
  • In the same skillet, whisk the large eggs and cook them over medium heat, stirring occasionally until they are fully set and fluffy.

Assembly

  • Carefully unroll the crescent roll dough onto your prepared baking sheet, separating the triangles.
  • Distribute the cooked sausage evenly over the wide end of each crescent roll triangle.
  • Next, layer the cooked scrambled eggs on top of the sausage.
  • Sprinkle a generous amount of shredded cheddar cheese over the eggs and season with a pinch of salt and pepper to taste.
  • Starting from the wide end, gently roll up each crescent roll to enclose the filling and form a compact roll-up.

Baking

  • Bake the roll-ups for 12-15 minutes, or until the crescent dough is golden brown and cooked through.
  • Let the Sausage Egg Breakfast Roll-Ups cool for a few minutes before serving, then garnish with fresh chives if desired.

Notes

For an extra kick, add a dash of hot sauce to the eggs while cooking. These roll-ups can also be made ahead of time and reheated in the oven or microwave. They are great for meal prepping!
