  • 1 lb ground sausage
  • 4 medium potatoes peeled and diced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups kale chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation

  • Brown the ground sausage in a large pot, then drain any excess grease and set the sausage aside.
  • In the same pot, sauté the chopped onion until softened, then add the minced garlic and cook for another minute until fragrant.
  • Add the diced potatoes and chicken broth to the pot, bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in the cooked sausage, heavy cream, chopped kale, salt, and pepper, and cook until the kale has wilted and the soup is heated through.
  • Serve hot and enjoy this delicious and comforting soup.

Notes

For extra flavor, consider adding a pinch of red pepper flakes with the garlic. You can also substitute spinach for kale if preferred.
