Main Ingredients

  • 1 lb ground sausage
  • 1 large onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes undrained
  • 1 cup small pasta (e.g., ditalini, elbow macaroni)
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Preparation and Cooking

  • Heat olive oil in a large pot over medium heat. Add ground sausage and cook until browned, breaking it apart with a spoon. Drain excess fat.
  • Add chopped onion, carrots, and celery to the pot. Cook until vegetables are softened.
  • Pour in chicken broth and undrained diced tomatoes. Bring the mixture to a simmer.
  • Add small pasta to the pot, stir well, and cook according to package directions, or until al dente.
  • Reduce heat to low. Stir in heavy cream and season with salt and pepper to taste.
  • Simmer for another 5 minutes to allow flavors to meld. Serve hot.

Notes

For a spicier soup, use hot Italian sausage. You can also add a handful of fresh spinach or kale during the last few minutes of cooking for added greens. This soup freezes well.
