  • 1 lb Italian sausage casings removed
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 6 cups chicken broth
  • 14.5 oz diced tomatoes undrained
  • 20 oz refrigerated cheese tortellini
  • 5 oz fresh spinach
  • 0.5 cup heavy cream
  • Parmesan cheese for serving

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned; drain any excess grease and remove the sausage from the pot, setting it aside.
  • Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and undrained diced tomatoes. Bring the mixture to a simmer.
  • Add the cooked sausage back to the pot. Stir in the refrigerated cheese tortellini and cook according to package directions, typically 3-5 minutes, until al dente.
  • Stir in the fresh spinach a handful at a time, allowing it to wilt before adding more. Once all the spinach has wilted, stir in the heavy cream.
  • Season the soup with salt and black pepper to taste. Serve hot, garnished with grated Parmesan cheese.

Notes

For a spicier kick, use hot Italian sausage. You can also add other vegetables like carrots or celery along with the onion for more flavor and nutrients.
