  • 1 lb lean ground beef (90/10 or 93/7)
  • 1 yellow onion diced
  • 2-3 garlic minced
  • 2-3 zucchini cut into half-moons or quartered and sliced
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup beef broth
  • 1-2 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste

  • Fresh parsley chopped (optional, for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Cooking Steps

  • Heat a large skillet over medium-high heat, add ground beef, and cook until browned, then drain excess fat.
  • Reduce heat to medium, add diced onion and cook for 3-5 minutes, then stir in minced garlic for another minute.
  • Add sliced zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until tender-crisp.
  • Pour in diced tomatoes and beef broth, then stir in Italian seasoning, salt, and pepper; bring to a gentle simmer.
  • Reduce heat to low, cover, and simmer for 5-8 minutes to meld flavors and cook zucchini to desired tenderness.
  • Remove from heat, adjust seasonings to taste, then garnish with fresh parsley and Parmesan cheese if desired, and serve hot.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. Serve this skillet dish on its own or with a side of crusty bread or pasta.
