  • 1 pound ground beef or Italian sausage
  • 1 medium onion
  • 2 cloves garlic
  • 1 can (28 ounce) crushed tomatoes
  • 1 can (15 ounce) diced tomatoes, undrained
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6-8 lasagna noodles, broken into 2-inch pieces

For Serving

  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese plus more for serving
  • 1/4 cup shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish optional

Cooking Steps

  • Heat olive oil in a large pot over medium-high heat. Add ground beef or sausage and cook until browned, then drain excess fat.
  • Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  • Pour in crushed tomatoes, diced tomatoes, and broth. Stir in dried basil, oregano, salt, and pepper, then bring the mixture to a simmer.
  • Add broken lasagna noodles to the simmering soup. Cook for 10-12 minutes or until al dente, stirring occasionally to prevent sticking.
  • Remove the pot from heat and stir in ricotta cheese, 1/4 cup Parmesan, and mozzarella cheese until melted.
  • Ladle the soup into bowls and garnish with additional grated Parmesan and fresh parsley, if desired.

Notes

This soup is easy to customize with your favorite vegetables. For a vegetarian option, omit the meat and use vegetable broth and a plant-based ground substitute.
