  • 6 slices stale bread cubed
  • 1 ½ cups shredded cheddar cheese divided
  • 8 large eggs
  • 1 ½ cups whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • Butter or cooking spray for greasing the baking dish

Preparation

  • Grease a 9x13 inch baking dish and layer the cubed bread evenly across the bottom.
  • Spread the cooked sausage and wilted spinach over the bread, then top with 1 cup of cheddar cheese.

Assemble

  • Whisk together eggs, milk, salt, pepper, and garlic powder in a large bowl until well combined.
  • Pour the egg mixture over the layers in the baking dish, ensuring the bread is fully submerged.
  • Sprinkle the remaining ½ cup of cheddar cheese over the top, then cover and refrigerate for at least 4 hours, or overnight.

Bake

  • The next morning, preheat the oven to 350°F (175°C) and let the casserole sit at room temperature for 15-20 minutes, removing the plastic wrap.
  • Bake for 45-60 minutes until set, puffed up, and golden brown; a knife inserted should come out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving.
