Savory Slow-Cooker Lemon-Herb Chicken with Root Vegetables

  • 2 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs (or a mix of dried thyme, rosemary, and oregano)
  • 2 large carrots, peeled and chopped into 1-inch pieces
  • 1 lb small red potatoes, quartered
  • 1 large onion, chopped
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice (added at the end)
  • 2 tbsp fresh parsley, chopped (added at the end)

Optional Thickener

  • 1 tbsp cornstarch for thickening
  • 1 tbsp cold water for thickening

Instructions
 

Preparation

  • Pat the chicken thighs dry and season them generously with salt, pepper, and dried Italian herbs.
  • Heat olive oil in a large skillet and sear the seasoned chicken thighs for 2-3 minutes per side until browned, then remove them and set aside.
  • Deglaze the skillet with 1/4 cup of chicken broth, scraping up any browned bits, and then pour this flavorful liquid into the slow cooker.
  • Place the chopped carrots and quartered potatoes at the bottom of the slow cooker, followed by the chopped onion.
  • Arrange the seared chicken thighs on top of the vegetables and onion, then pour the remaining chicken broth over everything.

Cooking

  • Cover and cook on low heat for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  • During the last 15 minutes of cooking or just before serving, stir in the fresh lemon juice and chopped fresh parsley for a burst of fresh flavor.
  • If the sauce is too thin, create a slurry by combining cornstarch and cold water, then stir it into the crockpot liquid; continue cooking on high for 15-30 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
  • Serve the chicken and vegetables hot.

Notes

For best flavor, don't skip the searing step – it adds a rich depth to the dish. Adjust cooking times based on your slow cooker's performance and the desired tenderness of the chicken and vegetables. This dish reheats well and is great for meal prep!
