  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 1/2 cup cooked and crumbled sausage (pork or chicken)
  • 1/2 cup cooked black beans, rinsed and drained
  • 1/4 cup corn (frozen or canned, drained)
  • 4 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/4 tsp smoked paprika
  • 1/8 tsp cumin
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped for garnish
  • Hot sauce optional, for serving
  • Avocado, sliced optional, for serving

Instructions
 

Cooking Steps

  • Heat olive oil in a 10-inch oven-safe skillet over medium heat.
  • Add chopped onion and bell pepper to the skillet and sauté for 5-7 minutes, or until softened.
  • Stir in the crumbled sausage, black beans, and corn; cook for another 2-3 minutes, stirring occasionally, until heated through.
  • Season the mixture with smoked paprika, cumin, salt, and pepper.
  • Create four divots in the skillet mixture and carefully crack one egg into each divot.
  • Sprinkle shredded cheddar cheese evenly over the skillet, avoiding direct contact with egg yolks if you prefer them softer.
  • Cover and cook for 5-8 minutes until egg whites are set, or transfer to a preheated oven at 375°F (190°C) for 7-10 minutes for desired doneness.
  • Garnish with fresh chopped cilantro and serve immediately with hot sauce and sliced avocado, if desired.

Notes

For a spicier kick, add a pinch of cayenne pepper with the rest of the seasonings. You can also customize this skillet with other vegetables like zucchini or spinach.
