  • 1.5 lbs ground beef
  • 2 lbs Yukon Gold or red potatoes cut into 1/2-inch cubes
  • 1 large onion
  • 3 cloves garlic
  • 1 red bell pepper optional, for color and flavor

Seasoning & Oil

  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • Salt and black pepper to taste

Topping & Garnish

  • 1 cup shredded cheddar cheese or a blend of your choice
  • Fresh parsley chopped, for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Cooking

  • Combine potatoes, onion, garlic, and red bell pepper with olive oil and seasonings; toss to coat.
  • Spread the seasoned vegetables on the baking sheet.
  • Season ground beef and crumble evenly over the vegetables.
  • Bake for 20 minutes.
  • Remove the sheet, break up beef, and stir with vegetables.
  • Return to oven for 15-20 minutes, or until tender and cooked through, stirring once if needed.

Finishing Touches

  • Sprinkle cheese over the mixture and bake for 5-7 minutes until melted and bubbly.
  • Garnish with fresh parsley if desired, and serve hot.

Notes

For an extra kick, add a pinch of chili flakes with the other seasonings. Make sure not to overcrowd the baking sheet to ensure even cooking and browning of the vegetables and beef. Use a sturdy spatula to break up the ground beef effectively during cooking.
