Sheet Pan Lemon Herb Salmon & Asparagus with Roasted Sweet Potatoes

  • 1.5 lbs salmon fillets skin on or off
  • 1 bunch asparagus trimmed
  • 2 medium sweet potatoes peeled and diced into 1-inch cubes

Seasoning & Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice from about 1/2 lemon
  • 1 teaspoon dried Italian herbs or 1/2 tsp dried oregano, 1/2 tsp dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or dill chopped, for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

Roast Sweet Potatoes

  • In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, 1/2 teaspoon of Italian herbs, 1/4 teaspoon garlic powder, salt, and pepper.
  • Spread the seasoned sweet potatoes on one half of the baking sheet and roast for 15 minutes to give them a head start.

Prepare Salmon & Asparagus

  • While sweet potatoes roast, toss the asparagus in the same bowl with the remaining 1 tablespoon of olive oil, 1/4 teaspoon garlic powder, salt, and pepper.
  • Pat salmon fillets dry, season with the remaining 1/2 teaspoon Italian herbs, salt, pepper, and lemon juice.

Combine & Finish

  • After 15 minutes, remove the baking sheet, add the seasoned asparagus and salmon to the other half.
  • Return to the oven and bake for 12-18 minutes until salmon is cooked through and asparagus is tender-crisp.

Serve

  • Remove from the oven, garnish with fresh parsley or dill if desired, and serve immediately with lemon wedges.

Notes

Ensure sweet potatoes are diced evenly for consistent cooking. Adjust salmon cooking time based on thickness to prevent overcooking. For extra flavor, consider adding a pinch of red pepper flakes with the herbs.
