  • 1 ½ lbs sirloin steak cut into 1-inch pieces
  • 1 lb asparagus tough ends trimmed
  • 3 tbsp olive oil divided
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • ½ tsp dried rosemary crushed slightly for more flavor
  • ½ tsp smoked paprika
  • Salt to taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a medium bowl, toss steak bites with 1 tbsp olive oil, half the minced garlic, ½ tsp thyme, ¼ tsp rosemary, smoked paprika, salt, and pepper.
  • In a separate bowl, toss asparagus with the remaining 2 tbsp olive oil, rest of the minced garlic, ½ tsp thyme, ¼ tsp rosemary, salt, and pepper.

Cooking

  • Spread seasoned steak bites and asparagus in a single layer on the baking sheet, ensuring not to overcrowd the pan.
  • Roast for 10-15 minutes, or until steak reaches desired doneness and asparagus is tender-crisp. Gently shake or stir halfway for even cooking.

Serving

  • Remove from oven and, if desired, squeeze fresh lemon juice or sprinkle fresh parsley before serving.

Notes

For crisper asparagus, ensure it is in a single layer and not overcrowded. Adjust cooking time for steak to achieve your preferred doneness, from medium-rare to well-done.
