  • 1.5 lbs Boneless, skinless chicken breasts or thighs
  • 4 tablespoons unsalted butter divided
  • 4-6 garlic freshly minced
  • 0.5 cup low sodium chicken broth
  • 1-2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley chopped
  • Salt to taste
  • Black pepper to taste

  • Slice chicken breasts horizontally if desired to create thinner cutlets, then pat them dry and season with salt and black pepper.
  • Sear chicken in 1 tablespoon of butter over medium-high heat for 3-5 minutes per side until golden brown and cooked through (165°F/74°C); remove and set aside.
  • Add remaining 3 tablespoons of butter to the pan, then sauté minced garlic for about 1 minute until fragrant, being careful not to burn it.
  • Pour in chicken broth and lemon juice, scraping up any browned bits; simmer for 2-3 minutes to reduce slightly.
  • Return chicken to the pan, toss to coat in the garlic butter sauce, stir in parsley, and serve immediately.

Notes

For extra flavor, marinate the chicken in a little olive oil and herbs before searing. This dish pairs well with rice, pasta, or a simple green salad.
