Simple Homestyle Meatloaf for Beginners

Ingredients
  

Meatloaf

  • 1.5 lbs 80/20 ground beef
  • 1/2 cup plain dry breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/2 onion
  • 2 cloves garlic
  • 1/4 cup ketchup (for inside the loaf)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Glaze

  • 1/2 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and prepare a baking sheet with parchment paper or foil, or lightly grease a loaf pan.
  • In a large bowl, whisk together the egg, milk, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper.
  • Stir in breadcrumbs, diced onion, and minced garlic into the wet mixture, letting it sit briefly to absorb liquid.

Forming and Baking

  • Add ground beef to the bowl and gently mix until just combined, being careful not to overmix.
  • Shape the meat mixture into a compact, oval loaf on the baking sheet, or press it into a loaf pan.
  • In a small bowl, whisk together the remaining 1/2 cup ketchup, Dijon mustard, and brown sugar to create the glaze.
  • Spread half of the glaze evenly over the top of the meatloaf and bake for 45-55 minutes.
  • Midway through baking (around 30 minutes), apply the remaining glaze and continue baking until the internal temperature reaches 160°F (71°C).

Resting

  • Remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing.

Notes

For best results, avoid overmixing the meat as this can lead to a tough meatloaf. Allow the meatloaf to rest fully for easier slicing and juicier results.
