  • 1.5 lbs Boneless, skinless chicken thighs or breasts
  • 2 Lemons 1 sliced, 1 for juice
  • 2 tablespoons Olive oil
  • 3 cloves Garlic minced
  • 1 teaspoon Dried herbs (Oregano, Thyme, or Italian seasoning)
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste
  • 2 cups Optional vegetables (Asparagus, broccoli florets, bell peppers, or baby potatoes)

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, toss the chicken with olive oil, minced garlic, dried herbs, salt, and pepper.
  • If using, add vegetables to the bowl and toss with a little more olive oil, salt, and pepper.
  • Add thin lemon slices to the bowl and gently toss with the chicken and vegetables.
  • Spread the chicken, lemon slices, and vegetables in a single layer on the prepared baking sheet, ensuring even spacing.

Cooking

  • Bake for 20-30 minutes, or until the chicken is cooked through (165°F/74°C) and nicely browned. Flip chicken breasts halfway through for even cooking.
  • Remove from the oven, squeeze the juice of the remaining lemon over everything, and serve immediately.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before baking. You can also experiment with different dried herbs based on your preference.
