  • 1/2 cup Unsweetened cocoa powder (45g)
  • 1/2 teaspoon Salt
  • 1 cup Chocolate chips (170g) (semi-sweet or dark)

For the Apple Pie Filling

  • 2 medium Baking apples (about 3 cups sliced) (like Granny Smith, Honeycrisp, or Fuji)
  • 2 tablespoons Unsalted butter
  • 1/4 cup Brown sugar (50g)
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1 tablespoon All-purpose flour (for thickening)
  • 1 teaspoon Lemon juice (optional, for brightness)

Instructions
 

Preparing the Luscious Apple Filling

  • Peel, core, and slice your chosen apples into even, bite-sized pieces.
  • In a cast-iron skillet (or oven-safe pan), melt butter over medium heat, then add the sliced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are tender-crisp and the sugars are slightly caramelized.
  • Stir in the flour and lemon juice (if using), and cook for another minute until thickened, then remove from heat and set aside.

Mixing the Fudgy Brownie Batter

  • Preheat your oven to 350°F (175°C); if not using a cast iron skillet for the apples, lightly grease and flour an 8 or 9-inch oven-safe skillet.
  • In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth and well combined.
  • Whisk in the eggs one at a time, ensuring each egg is completely mixed in before adding the next, then stir in the vanilla extract.
  • In a separate medium bowl, mix together the all-purpose flour, cocoa powder, and salt.
  • Slowly add the dry ingredients to the wet ingredients, mixing until just combined without overmixing.
  • Gently fold in the chocolate chips.

Assembling and Baking Your Skillet Apple Pie Brownies

  • Pour half of the brownie batter into the prepared skillet and spread it evenly.
  • Carefully spoon the apple pie filling over the brownie layer, gently spreading it to cover.
  • Place dollops of the remaining brownie batter over the apple filling; it does not need to be perfectly spread as the brownies will expand when they bake.
