  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 3 cups corn kernels (about 3 ears fresh, or 1 can (15 oz) drained and 2 cups frozen corn)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
  • 1/2 cup chicken broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt and freshly ground black pepper to taste

For the creamy sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp fresh lime juice
  • 1 tbsp chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese (plus more for garnish)

Instructions

  • Place the chicken breasts or thighs at the bottom of the slow cooker.
  • Scatter corn kernels, black beans, and Rotel over the chicken, then pour in the chicken broth.
  • Evenly sprinkle chili powder, cumin, smoked paprika, garlic powder, salt, and pepper over all ingredients.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until the chicken is tender and easily shredded.
  • Remove and shred the cooked chicken with two forks, then return it to the slow cooker and stir into the corn and bean mixture.
  • In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), fresh lime juice, and chopped cilantro.
  • Add the creamy sauce and 1/4 cup crumbled cotija cheese to the slow cooker; stir until combined and heated through on HIGH for 10-15 minutes.
  • Serve the dish, optionally garnished with extra cotija cheese and fresh cilantro.

Notes

For extra flavor, consider marinating the chicken for a few hours before cooking. Adjust the amount of chili powder for more or less heat to suit your preference. If you don't have cotija cheese, feta cheese can be a good substitute.
