  • 1/4 cup Unsalted Butter softened
  • 1/4 cup + 2 tablespoons Granulated Sugar 75g
  • 1 Large Egg Yolk only
  • 1/2 teaspoon Vanilla Extract
  • 3/4 cup + 2 tablespoons All-Purpose Flour 105g
  • 1/4 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  • Granulated Sugar for rolling

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.

Mixing

  • In a medium bowl, cream together the softened butter and granulated sugar until light, fluffy, and pale.
  • Beat in the egg yolk and vanilla extract until well combined.
  • In a separate small bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet, mixing until just combined without overmixing.

Forming and Baking

  • Chill the dough for 15-20 minutes if it seems too soft or your kitchen is warm.
  • Scoop out 6 equal dough balls, and if desired, roll each in granulated sugar to coat.
  • Place cookies 2 inches apart on the baking sheet and gently flatten each slightly.
  • Bake for 8-10 minutes, or until edges are lightly golden and centers are still soft.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough helps the cookies maintain their shape. Do not overbake for the best soft texture.
