  • 12 large eggs
  • 1/2 cup milk
  • 1 pound cooked breakfast sausage, crumbled
  • 1 cup diced bell peppers (red and green)
  • 1/2 cup diced onion
  • 1 can (15-ounce) black beans, rinsed and drained
  • 1 can (4-ounce) diced green chilies, undrained
  • 1 cup shredded Monterey Jack cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Cooking spray or butter for greasing

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, whisk together the eggs and milk until they are well combined.

Combine & Bake

  • Stir in the cooked sausage, bell peppers, onion, black beans, green chilies, 1/2 cup of Monterey Jack cheese, and all the spices into the egg mixture.
  • Pour the mixture into the prepared baking dish and sprinkle with the remaining 1/2 cup of cheese.
  • Bake for 35-45 minutes, or until the center is set and a knife inserted comes out clean.

Serve

  • Remove the casserole from the oven and let it rest for 5-10 minutes.
  • Serve hot, topped with salsa, avocado, and cilantro if desired.

Notes

This casserole is great for meal prep; you can assemble it the night before and bake it in the morning. Feel free to adjust the level of spice to your preference by adding more or less chili powder and green chilies. Leftovers reheat well in the microwave or oven.
