Cake

  • 1 cooled, baked cake (8-9 inch round or 9x13 inch rectangular)

Frosting & Toppings

  • 3 cups prepared frosting (buttercream, cream cheese, or ganache)
  • 1 cup fresh mixed berries (strawberries, raspberries, blueberries)
  • 1/4 cup chocolate shavings
  • 1 tablespoon powdered sugar (for dusting)

Instructions
 

Preparation

  • Clear your counter and gather all ingredients and tools: cooled cake, frosting, offset spatula, optional bench scraper, fresh berries, chocolate shavings, and powdered sugar.

Crumb Coat

  • Apply a very thin layer of frosting over the entire cake using an offset spatula. Refrigerate for 10-15 minutes to set the crumb coat.

Main Frosting Layer

  • Once the crumb coat is set, apply a generous layer of frosting over the top and sides of the cake, spreading it evenly with your offset spatula. Optionally, use a bench scraper to smooth the sides for a cleaner finish.

Decorating

  • Artfully arrange the fresh berries on top of the cake, placing larger berries first. Sprinkle chocolate shavings around the border or over a portion of the berries, then lightly dust the entire top of the cake with powdered sugar.

Finishing Touches

  • Wipe away any stray frosting from the cake stand to complete your presentation.

Notes
