  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese plus more for garnish
  • 1/2 tsp dried Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped for garnish

  • Pat chicken breasts dry, then slice each horizontally to create thinner cutlets. Season generously with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat. Cook chicken cutlets for 4-6 minutes per side until golden brown and cooked through; remove and set aside.
  • Reduce heat to medium, add minced garlic to the same pan, and cook for 30 seconds to 1 minute until fragrant.
  • Pour in chicken broth, scraping up any browned bits from the pan. Simmer for 1-2 minutes until slightly reduced.
  • Stir in heavy cream and Italian seasoning, bring to a gentle simmer, then reduce heat to low. Incorporate Parmesan cheese until smooth and the sauce thickens slightly; season with salt and pepper.
  • Return cooked chicken to the pan, nestling it into the sauce. Simmer gently for 1-2 minutes to heat through and absorb flavors, then garnish with parsley and extra Parmesan.

Notes

Serve this creamy chicken with pasta, rice, or a side of steamed vegetables. For an extra kick, add a pinch of red pepper flakes to the sauce.
