  • 1/2 pound (225g) large shrimp, peeled and deveined fresh or frozen, thawed
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika optional
  • Salt & black pepper to taste
  • 1/2 lemon for squeezing
  • 2 cups mixed greens e.g., spinach, arugula, spring mix, pre-washed
  • 1/2 cup cherry tomatoes, halved optional, for color and freshness

Instructions
 

Cooking Steps

  • Thaw frozen shrimp under cold water or in the refrigerator, then pat them thoroughly dry.
  • Toss dried shrimp with olive oil, garlic powder, smoked paprika (if using), salt, and pepper until coated.
  • Heat a non-stick skillet or cast-iron pan over medium-high heat for about 1 minute until hot.
  • Add seasoned shrimp to the hot pan in a single layer and cook for about 1 minute per side until pink and opaque. Cook in batches if needed.
  • While shrimp cook, arrange mixed greens and cherry tomatoes (if using) on a plate.
  • Transfer cooked shrimp to the plate immediately and squeeze fresh lemon juice over the top.

Notes

For extra flavor, marinate the shrimp for 10-15 minutes before cooking. Ensure your pan is very hot to achieve a good sear on the shrimp.
