Speedy Lemon Garlic Shrimp Pasta

  • 1 lb raw shrimp, peeled and deveined (about 450g)
  • 8 oz spaghetti or kid-friendly pasta shape (about 225g)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1 medium lemon, juice of
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for serving)
  • 1 cup broccoli florets (fresh or frozen)

Cooking

  • Cook pasta in a large pot of salted boiling water according to package directions. Add broccoli florets during the last 3-4 minutes of cooking until tender-crisp. Drain well.
  • Pat shrimp dry and season with salt and pepper.
  • Heat olive oil and butter in a large skillet over medium-high heat. Sauté minced garlic for 1-2 minutes until fragrant.
  • Add seasoned shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the pan.
  • In the same skillet, add chicken or vegetable broth and lemon juice. Simmer for 1-2 minutes, scraping up any browned bits to thicken the sauce.
  • Return shrimp, pasta, and broccoli to the skillet with the sauce. Toss to combine and stir in fresh parsley. Adjust seasoning as needed.
  • Serve immediately, topped with grated Parmesan cheese if desired.

Notes

For extra flavor, you can marinate the shrimp in a little lemon juice and garlic powder for 10 minutes before cooking. Ensure you do not overcook the shrimp, as they can become rubbery quickly. If you want a creamier sauce, stir in a tablespoon of cream cheese or heavy cream at the end.
